Yunlin is a big granary in Taiwan. Besides rice production, peanuts are also one of the leading local crops. In the early rural life, there were no snacks and desserts. Farmers would use rolled dough wrapped with ground peanuts & sugar to make the shape similar to a dumpling, and then put them to deep-fry. It could be served as a main meal as well. Crocodile shape deep-fried dumpling is the unique traditional snack that has spread for more than three hundred years at Mailiao.
Crocodile deep-fried dumpling is a deep-fried golden crust filled with ground peanut powder with refined sugar. It tastes sweet but not greasy. The thin crust with sweet-peanut powder inside makes the first bite full of crispy peanut aroma. It always makes you want to eat more and more, and you cannot stop to licking your fingers. According to the folk story, the founder, Master Chunzhen Pu of Gongfan temple, had encountered a storm while he was traveling to Taiwan. Fortunately, he arrived safely, which made him believe it was from Matzu’s blessing. After ritual divination, they dedicated her the Crocodile shape deep-fried dumplings, which imitate the shape of golden nuggets. They used wheat, a local abundant grain back then, and peanut to show respect to Matzu. After that, the Crocodile deep-fried dumpling (pronounced as thôo-tāu-jîn/thôo-tāu-lîn 土豆仁 in Taiwanese dialect) became a popular worship offering at Mailiao township.
